Toasted coconut double chocolate chip cookies

Hello internet peeps! How’s life? I know mine has been pretty boring, but I suppose that’s good in the grand scheme of things. School’s almost over. I took the AP Bio test—which was stressful as fuck, but now it’s all over and I don’t have to worry about things like, say, what an action potential is anymore. I can’t say I’ve been baking much lately, but that’s mostly because I’ve been trying to eat a little healthier and reducing the amount of cake I consume is definitely part of that. Unfortunately.

Chocolate coffee layer cake

Wow, it sure has been a while since I’ve posted, hasn’t it? My bad. Blame it on schoolwork, upcoming finals, AP exams next week (AHHHH!), etc. etc.

Triple chocolate cake truffles

vegan triple chocolate cake truffles

We all make mistakes in the kitchen on occasion. Sometimes we forget to add the baking soda to the cake batter (guilty); sometimes we accidentally add four times as much fat as a certain recipe requires for no reason other than I’m a dumbass (yep, guilty); sometimes we take the cake out of the pan too early and it crumbles into moist, steaming chunks (guilty, far too many times over). And it sucks. It’s a waste of time and energy and ingredients.

But sometimes, the resulting tragedy can be salvaged. These truffles are one way to do that.

Bourbon thyme chocolate chip cookies

vegan bourbon thyme chocolate chip cookies

I dunno about you, but we’ve been having a pretty weird start to our spring over here in New England. Recently, we got a good few inches of snow and were this close to having an actual snow day on the fourth of April. Crazy, right? I hadn’t heard about the impending snowstorm and thus was convinced I was hallucinating for a good five seconds when I woke up this past Sunday and saw a blanket of snow covering the ground. Because it couldn’t possibly have snowed, since it was lovely all week and now there all this white stuff everywhere and what happened, exactly?

Anyway. That was fun.

Lavender layer cake

Happy April everyone! With spring upon us (the passing of time never fails to surprise me, I tell you), a refreshing, lightly-flavored cake such as this one seems appropriate.

Pecan pie cinnamon rolls

vegan pecan pie cinnamon rolls

Hi there! Yes, I’m still alive. I’mma make this post quick and dirty (or as much so as is possible in this corner of the internet) because I’ve got a shit ton of homework to do and this lazy Sunday is drawing to a close all too rapidly.

These cinnamon rolls began when I got a copy of Dessert Mash-Ups, the book by Dorothy Kern, for Christmas last year (that’s where having a GoodReads wish-list comes in handy, people). That book is full of devilishly good ideas, but I was immediately drawn to these cinnamon rolls. Obviously. I never say no to a good cinnamon roll.
